Dehydrator. Veg drying

Asparagus
Remove tough ends and large scales.Cut into 1inch/2.5cm sections
blanch for 3mins in a pan of boiling water.Strain and plunge into cold water.Let stand until cold.Drain well.
Dry at 130f/55c for 12-14hrs.
It should feel dry and crisp and have no sign of moisture when broken open.
 
Broccoli
break into 1inch/2.5cm florets.Discard stems
blanch in boiling water for 2mins,strain and plunge into cold water.Stand until cold and drain well
dry at 130f/55c for 6-8hrs
Florets should feel dry and crisp and have no sign of moisture inside when broken open.
 
Carrots/parsnips
peel and cut crosswise into slices about1/4inch 0.5cm thick
blanch in boiling water for 3mins,drain and plungeinto cold water,let stand until cold and then drain well.
Dry at 130f/55c for 6-8hrs.
slices should feel dry and crisp but still be slightly flexible

Cauliflower
break into 1inch/2.5cm florets
blanch in boiling waterfor 4mins.strain and plunge intocold water. drain.
dry at 130f/55c for 8-10hrs
florets should feel dry and crisp.

celery
trim ends and cut stalks crosswise into 0.5cm slices
blanch for 1min,drain and plinge into cold water.drain
dry at 130f/55c for 6-8hrs.
celery will shrink a lot as it dries.use mesh liners.
The edges should ripple when dried.
